Wrong forum but ....ok. My first thought would be fuel delivery. Is fuel pressure where it should be? On a 3.8 in a Caravan it should be at 55 psi =/- 5. Since 07 Caravans don't have a filter I'll say you don't (??). Connect a fuel pressure gauge and check the pressure. Are the injectors clogging? Use a cleaner or have a shop clean them. Next thought? Clogged cat. Connect a vacuum gauge. Run the engine up to 2000 rpm and hold it there for 2 minutes. If vacuum slowly drops the cat converter may be clogged or partially clogged.
